Links like https://gitlab.mister-muffin.de/josch/mmdebstrap/archive/1.5.7.tar.gz are returning 500 error now, making downstream packaging impossible.

I'm very sorry, your issue totally fell through the cracks and it was only thanks to Jochen that I had a look. You are right, the tarballs return a HTTP 500 and I have to investigate why. Deleting the tag and pushing a new one does not seem to fix the issue. So to unblock you, I created another mirror of mmdebstrap on the Debian gitlab. Does this work for you?
